1 TEASPOON BUTTER

1 CUP SLICED BUTTON MUSHROOMS

1/2 CUP HEAVY CREAM

In a nonstick skillet, heat the butter over medium heat. Add the mushrooms and cook, stirring, for 3 minutes. Add the cream and gently stir until the sauce thickens, 4 minutes. Season to taste with sea salt and cracked black pepper.

Elegantly easy—music to my ears!

1 SHEET FROZEN PUFF PASTRY, THAWED BUT CHILLED

2.5 OUNCES BRIE CHEESE, CUT INTO 16 PIECES

3 OUNCES QUINCE PASTE, CHOPPED

Preheat the oven to 400°F. Roll the pastry out and use a 2-inch round cookie cutter to cut 16 rounds from the dough. Divide the rounds between 2 nonstick muffin tins and prick all over with a fork. Distribute the Brie pieces and quince paste evenly among the pastry rounds and season lightly with sea salt and pepper (to taste). Bake about 10 to 12 minutes or until crisp and golden. Remove the tarts from the oven and set aside to cool.
